About Thyme

Situated in the heart of the Cotswolds, Thyme is a ‘village within a village’, a collection of restored, historic farm buildings forming a peaceful hamlet environment. In addition to cottages and garden rooms, bedrooms are dispersed across a Georgian Rectory and a 17th-century farmhouse.

This quintessentially English country destination comprises the Ox Barn restaurant, the Swan pub, the Baa Bar, Meadow Spa, Botanical Bothy and
two boutiques selling Bertioli by Thyme silk wear, tableware and beauty products. A cookery school, farm, kitchen gardens, orchards and water meadows are also on site.

Thyme is a family story where a passion for the land, food and entertaining merges with a love of nature, beauty and conservation. Their ethos is simple. Their dedication is resolute. Conserving the beauty of the land through generations of love for generations to come.


The botanically inspired bedrooms are dispersed across houses and cottages, forming a peaceful hamlet environment with gravel pathways to lead you through the gardens. No two rooms are the same, with colours inspired by their botanical names and graced with carefully sourced antique pieces.


Rooted in a passion for the local land, food, and entertaining, carefully curated menus tell a story of the farm and seasons. Under the direction of Charlie Hibbert, the chefs and gardeners at Thyme work together to select and grow the fruits, vegetables and herbs used to create his modern British countryside fare.


The Meadow Spa offers calm, stillness and nurtures beauty from within. The botanical spa is an idyllic haven of peace and tranquillity, a place for mindfulness and meditation, providing respite from our hectic lives. The Meadow Spa encompasses the Meadow Cottage, a Botanical Bothy, and a spring water swimming pool.

Gardens & Farm

Situated on the edge of the water meadows, Thyme’s carefully managed kitchen gardens ensure abundance from the land while protecting and maintaining the fertile alluvial soil. The garden is productive for much of the year with a large variety of flavoursome and unusual produce to supply the restaurants.

The Tithe Barn

The Tithe barn at Thyme hosts a series of seasonal exhibitions offering a cultural narrative that reflects the ethos of Thyme.


A Mother and Daughter team, Bertioli is the sibling brand of Thyme. Inspired by nature, Caryn and Milly Hibbert design simple, beautiful products for everyday living that inspire a connection to the land and nourish both people and the planet. The range includes Homeware, Womenswear, Interiors, Breathing and Beauty.
