Cotswolds Distillery launches The Hidden Still bar and new Cotswolds Wild Spritz this May

Cotswolds Distillery has announced the launch of a new distillery bar experience, The Hidden Still, alongside the introduction of a new Cotswolds-exclusive aperitivo, Cotswolds Wild Spritz, as it continues to expand its visitor offering ahead of the summer season.

The new bar will open at the distillery’s site in the village of Stourton on Saturday 23rd May, operating on Friday and Saturday evenings from 5pm to 9pm through to the end of September. The launch marks the latest addition to the growing hospitality and visitor experience at Cotswolds Distillery, which was founded in 2014 and has developed from its origins in a converted barn into the first full-scale distillery in the Cotswolds.


Positioned as a seasonal evening destination, The Hidden Still will offer a curated cocktail and drinks programme designed to showcase the distillery’s gin and whisky portfolio in a more experiential setting. The bar will host regular Friday and Saturday evening sessions featuring cocktails, tastings and events led by Head of Mixology Ollie Morris.

Morris, who has been part of the distillery team for more than a decade, has played a key role in shaping its cocktail identity and will oversee the drinks offering at the new venue. The menu will include a selection of house classics made with Cotswolds Distillery Dry Gin and Signature Whisky, alongside whisky-forward serves, spritzes and seasonal long drinks. A daily-changing frozen cocktail, the Cotswolds Slushie, will also feature, complemented by low and no-alcohol options as well as a curated selection of wine and beer.


Alongside the opening of The Hidden Still, the distillery has also announced the launch of Cotswolds Wild Spritz, a new 30% ABV aperitivo available exclusively in the Cotswolds from 22nd May.

The new expression has been developed as a bittersweet English aperitivo inspired by the natural landscape of the Cotswolds and the distillery’s focus on flavour and provenance. It combines bright citrus, soft floral notes and layered botanicals to create a dry, refined profile designed for long summer drinks. Recommended serves include pairing with chilled sparkling wine and soda, or serving over ice with premium tonic or soda and a twist of citrus.


The distillery said the launch reflects its continued commitment to producing spirits that capture the character of the surrounding area, with a focus on quality, craftsmanship and local inspiration.

Visitors to the Stourton site can already access a working distillery, warehouse, café, shop and terrace, with The Hidden Still adding a new evening dimension to the offering. The space is expected to operate throughout the summer months as a key destination for both local visitors and tourists exploring the wider Cotswolds region.
