Staying true to his classic Roux training, Olivier prides himself in using fresh, local & seasonal produce, from Chiltern muntjac to foraging for mushrooms and wild garlic. With a “no-frills” approach to cooking, he always strives to bring out the most honest flavours in his dishes.
