The Hollybush is a contemporary gastropub with a buzzy vibe and a hint of sophistication that serves delicious local food along with a compelling selection of wines, cocktails and local ales.
Set in an 18th-century building with low ceilings, original beams, wooden panelling, a wood-burner, eclectic furniture and original art. The large garden has plenty of undercover seating as well as unique dining houses for small groups.
The Hollybush is led by Luke Champion and Alex Vaughan, both local lads with a passion for hospitality who cut their teeth working in pubs and bars in London and Brighton before coming back to Witney with a dream to run their own pub.
They opened the Hollybush in 2015, followed by The Horseshoes across the road in January 2019.
The menu is inspired by the best seasonal local ingredients. You’ll find clean, pared-back dishes with weekly changing specials. Produce is sourced locally as much as possible from local farms, butchers, Cotswold cheesemakers and vegetable growers. They make everything from scratch – from bread to ice cream.
While you’ll find fish and chips, pies and burgers on the menu – howbeit with the Hollybush twist – they also push out the boat with more sophisticated plates. The Sunday roasts are popular – and of course, there are always plenty of options for vegetarians and vegans.
They offer fantastic beer, wine, spirits and cocktails and non-alcoholic cocktails. Interesting craft beers and cask ales, including a house brew.
Wine is sourced from the Oxford Wine Company.
Many of the spirits come from local distilleries, including The Spirits of Ilmington and Wood Brothers Distilling Company. The coffee comes from Witney based UE Coffee Roasters.
