Chicken Casserole Recipe

Enjoy the tastes and smells of the new season with this hearty one-pot Chicken Casserole recipe using local, seasonal produce.

Ingredients

  • 4 to 6 pieces of organic chicken drumsticks and thighs
  • A couple of handfuls of seasonal cherry tomatoes, halved
  • A bunch of fresh basil leaves
  • 1 whole garlic bulb, broken into cloves and peeled
  • 1 fresh red chilli, finely chopped
  • A splash and drizzle of extra virgin olive oil
  • 1 can of cannellini beans, drained and rinsed
  • Freshly ground black pepper and salt to taste

Method

  1. Heat the oven to 180°C / 350°F / Gas Mark 4 and prepare an oven-safe serving bowl with a splash of olive oil. (We love this Natural Canvas Serving Bowl by Denby Pottery)
  2. Season your chicken with salt and pepper and pop them into the bowl, skin side up.
  3. Add the tomatoes and cannellini beans, and top with basil leaves.
  4. Scatter the garlic cloves into the dish with the chopped chilli and drizzle over some olive oil.
  5. Mix the ingredients to help distribute the ingredients evenly in the dish, and the flavours mingle.
  6. Place in the oven, uncovered, for 1.5 hours, turning any of the exposed tomatoes and beans halfway through, until the chicken skin is crisp and the meat is soft and moist.
  7. Bring your serving bowl to the table and enjoy.
