Ingredients

  • 100ml vodka
  • 100ml spiced pumpkin puree
  • 50ml lemon juice
  • 20ml sugar syrup
  • 4 dashes angoustura bitters
  • 40ml egg whites
Spiced Pumpkin Puree:
  • 1 whole pumpkin
  • Water
  • Cinnamon
  • Nutmeg
  • Ginger
* You can buy pumpkin puree if you prefer

Garnish:
  • Star anise
  • Cinnamon sticks

Method

  1. If you are making your own pumpkin puree, cut the pumpkin into quarters, then peel and cut into chunks.
  2. Place in a large saucepan with all the chosen spices (cinnamon, nutmeg and ginger, but you can adapt spices and quantities to taste), cover with water and bring to the boil.
  3. Cook for 20 minutes or until the pumpkin is tender. Drain well and allow to cool.
  4. Puree the flesh in a food processor or mash with a potato masher. The puree can be refrigerated for up to 3 days, or kept in the freezer for 3-6 months.

To make the cocktail, dry shake all the ingredients together, then shake again over ice. Strain and serve in a tumbler over ice.

Garnish with star anise or a cinnamon stick.
