
Escapade Silverstone’s ‘The Gallery’ – the closest restaurant to the circuit action has announced the appointment of Matt Tsistrakis as its Head Chef.
Chef Matt Tsistrakis joins the hotel and unique leisure venue as Head Chef to lead the kitchen at the recently opened restaurant and bar, The Gallery, which offers the best view of the iconic circuit at Silverstone.
Previously Head Chef at Auriens Chelsea and The Savoy Hotel in London, Tsistrakis has over 15 years of experience working with prestigious culinary teams all over the world, including The Connaught, Simpson’s in the Strand, The Sloane Club in London, The Fairmont St Andrews Scotland and Elounda Mare in Crete.
Passionate about quality and an advocate for simple, fresh and uncluttered dishes, Tsistrakis creates plates to showcase the finest seasonal ingredients and make them the hero of the dish. Growing up in Crete, food and family have always been intertwined, and he still applies the family cooking traditions to his professional kitchens years later.
Tsistrakis commented: “In my Greek home, food was discussed and prepared with care and respect, and this philosophy still guides me in my own kitchen today. The best things for me come when tradition and innovation meet. The Gallery Restaurant & Bar is a 112-cover restaurant and bar with an open-plan dining room and several table settings looking out onto the Grand Prix circuit, two-person tables, larger settings for groups and more relaxed sofa dining options and snugs. There is also a modern bar surrounded by motorsport-inspired artwork.
The restaurant is open to everyone for breakfast, lunch and dinner. The menu is updated seasonally but is always centred around nutrition and sustainability. From abundant breakfasts to satisfying nightcaps, dishes are based on the best of British produce with an internationally-minded, culturally savvy twist.
Collaborating with local and independent suppliers to source the finest ingredients, highlight dishes on the autumn menu includes pork scrumpet, apple, pickled radish and English mustard for starter; duck confit leg, lavender honey, peach, fennel and courgette for main; and for dessert – rice pudding parfait, british strawberries and fennel pollen meringue. The portobello mushroom marinated grilled tofu, avocado, aioli and chips dish is a firm favourite with vegetarians.
The Gallery is also ideally suited for intimate group events and larger corporate bookings, with a 22-capacity briefing room and 10-person private dining space. The restaurant, bar, and roof deck are also available for exclusive hire for up to 150 people. The Escapade Silverstone restaurant was designed by UK-based Twelve Architects.
Escapade Silverstone and partner Veuve Clicquot designed the roof deck in collaboration, featuring the iconic house yellow, specially designed lounge chairs and cushions.
In time for the colder months, locals and private clients alike can enjoy an elevated roof deck experience with cosy blankets and a glass in hand. The icons of the Veuve Clicquot portfolio will feature Yellow Label, Rosé and La Grande Dame 2015 Blanc, available by the glass and the bottle.
Escapade Silverstone is a first-of-its-kind hotel and leisure venue managed and operated by the world-famous circuit, offering 60 residences, a trackside restaurant and bar, a roof deck, private meeting spaces and briefing rooms, as well as a state-of-the-art wellness facility run by Formula Health’s Gemma Fisher including a gym, 15-metre pool, sauna as well as treatment rooms specializing in nutritional and wellness programmes designed for athletes.
