Nut Tree Inn and Galvin Green Man launch exclusive January menu exchange

Two of Britain’s most acclaimed countryside pubs, The Nut Tree Inn in Oxfordshire and Galvin Green Man in Essex, are joining forces this January for an exclusive two-night menu exchange that celebrates the best of British seasonal cooking.

The collaboration brings together Michelin-starred chef Mike North and his wife Imogen of The Nut Tree Inn, and Michelin-starred brothers Chris and Jeff Galvin, founders of Galvin Green Man, which proudly holds a Michelin Bib Gourmand.

On 15 January in Chelmsford and 29 January in Murcott, diners will experience an immersive culinary swap as both teams cook side-by-side in each other’s kitchens. Each evening will feature a unique four-course menu designed to showcase a blend of signature dishes, collaborative creativity and refined British gastronomy.

At Galvin Green Man on 15 January, the menu begins with The Nut Tree Inn’s Salad of Cornish crab with citrus, chilli and coriander, followed by the Galvin kitchen’s Fillet of sole ‘Veronique’ in a Champagne sauce with sea vegetables.


The main course highlights The Nut Tree Inn’s elevated Guinea fowl dish — a combination of roast breast and rich leg tart with morel, Madeira, hazelnut and truffle. The Galvin team ends the evening with a Yorkshire rhubarb soufflé served with crumble and milk ice cream.

On 29 January, the experience moves to Oxfordshire, where The Nut Tree Inn will host the Galvin team. The evening opens with Galvin’s indulgent Lasagne of Dorset crab with beurre Nantaise, followed by The Nut Tree Inn’s roasted veal sweetbreads on pearl barley and Jerusalem artichoke risotto with a maple glaze.

For the main, the Galvin chefs present a Roast Cumbrian fillet and slow cooked beef cheek with truffle mash and Bordelaise sauce. The Nut Tree Inn closes the night with its favourite Sticky toffee pudding with caramel apple and vanilla ice cream.

Both pubs are known for their comforting yet elevated approach to British dining, rooted in heritage buildings, warm hospitality and seasonal ingredients.

This menu exchange celebrates their shared ethos while offering guests an intimate winter dining experience in two atmospheric countryside settings. Menus are priced at £85, with optional wine pairings available.
