Foolproof Basic Pancake Recipe

Ingredients

  • 100g plain flour
  • 2 large eggs
  • 300ml milk
  • 1 tbsp sunflower or vegetable oil, plus a little extra for frying

Method

  1. Sift the flour into a bowl along with a pinch of salt
  2. Make a well in the centre of the flour and add the eggs, milk and oil
  3. Whisk to a smooth batter.
  4. Set aside for 30 mins to rest if you have time, or start cooking straight away.
  5. Set a medium frying pan or crêpe pan over a medium heat and carefully wipe it with some oiled kitchen paper.
  6. When the frying pan is hot, add some of the batter to the frying pan using a ladle or cooking spoon.
  7. Cook the pancakes for 1 min on each side or until golden.
  8. You can serve immediately or keep them warm in a low oven as you go.

Serve with your favourite filling such as lemon wedges and caster sugar, or a drizzle of honey or maple syrup, or even fresh berries and cream.

Once cold, you can layer the pancakes between baking parchment paper, then wrap in cling film and freeze for up to 4-6 weeks. Reheat in a warm oven or in a microwave.
