Cucumber and Cream Cheese Sandwich Recipe

Ingredients

  • 8 oz cream cheese softened
  • 3 tablespoons mayonnaise
  • 2 teaspoons chopped fresh dill
  • 1 teaspoon chopped fresh chives
  • 1/4 teaspoon garlic powder
  • salt & pepper to taste
  • 1 cucumber, thinly sliced
  • 1 loaf sliced white bread

Method

  1. Mix the cream cheese and mayonnaise in a small bowl until smooth using a wooden spoon or hand-mixer.
  2. Stir in herbs, garlic powder and salt and pepper to taste.
  3. Butter the bread thinly to the crust.
  4. Spread bread slices with cream cheese mixture.
  5. Arrange a single layer of cucumbers on the buttered slice, then top with a second buttered slice.
  6. Press down lightly on the sandwich and cut away the crusts leaving a neat square.
  7. Slice the sandwich into small triangles by cutting diagonally, twice.

Place the thinly sliced cucumber onto kitchen paper and pat dry to remove extra moisture. This will help prevent the bread from becoming soggy too quickly.

Similarly, butter the bread thinly to the crust to create a barrier that helps keep moisture away from the bread.

If you’re in a rush, you can use herb and garlic cream cheese.

Cut the cucumber sandwiches into triangles, or fingers, or even into perfect circles using a cookie cutter. It’s up to you; do what pleases you.

Use only soft white sliced bread for this recipe and be sure to remove the crusts. Stick to tradition; there is no place for sourdough or thick granary bread here.
